The cherry

Who’s VITTORIO? Vittorio is our special extra aged, named after my father.

All traditional balsamic vinegar inherits certain characteristic features of its producer. Vittorio, born of fragrant Trebbiano grapes coming from our ancient vines, more than others has been absorbing dad’s personality.
Dark brown, transparent, shining, with a complex and persistent scent, full body, well balanced by the blend of acidity and sweetness, with a mild fruity savour given by the sweet cherry wood.

Produced in limited quantity: little less than 100 bottles per year

Ingredient: cooked grape must
Colour: dark brown bright shining colour
Perfume: surprising mild fruity bouquet, delicate round and deep acidity
Taste: Consistent syrupy density and full-body. Complex aromatic bouquet with red cherries fruity hints. High well balanced acidity with long, deep and intense notes. The aftertaste is long lasting, intense, clean and rich in flavour.

In the kitchen

Great to top ice cream, zabaione, sweet or savoury crème brûlée, strawberry, cherry and ripe fruit salads. On a terrine de fois gras.
To sip pure on a tea-spoon.
